question about custom orders

I was wondering what the average waiting time is for custom items? And if there was a way to order an item that the dwarf says you cant have?

Hmmm, from what I have heard it takes around av. 1-2 weeks until you get the message from the smith.

About your other question: That heavily depends on what you would like to have

Get in contact with the wizard taking care for customs and simply ask...
