In my case, I have an idea for a character, then I determine what the character thinks about the gods from his/her background. In some cases, this has resulted in a char. who takes an atypical view of a single deity or maybe all deities. Its hard to give an example without going into a whole diatribe about a particular IG character history. Lets say a char. sees a family member get murdered by an Asral cleric, but that char. is themselves an Asral. They may not abandon Asral, but instead change the way they worship him. For instance, after that incident they might get more or less fervent. If its more, they might embrace Asral's decision and kill the rest of their family that does follow him. If its less, they might add the caveat to their beliefs that 'family comes first over my faith'. They might even assume that Asral meant to replace their family, and start treating him like father figure, which would be atypical as well. Stuff like that...
